Description

Today I take all I know about smoking a Texas style pork belly, but use a Weber Kettle. The result was amazing, and super easy! Perfect for pork belly sandwiches or eating on it's own!

Ingredients

  • Pork belly 
  • Hot sauce
  • Rub of your choice (such as Chud rub)
  • Apple cider vinegar (ACV)
  • Hot honey

Instructions

  • Start by taking your pork belly and patting it dry. Split the pork belly in half if desired. Minimal trimming is needed for this recipe.
  • Slather the pork belly with hot sauce, ensuring all sides are coated. Then generously season the pork belly with your chosen rub, making sure to cover it evenly. Don't forget the sides.
  • Fire up your Weber grill. Position the pork belly on the grill with the thicker side facing the fire. Aim to maintain a temperature of around 250-300°F (120-150°C) throughout the cooking process.
  • After approximately 3 hours of cooking, check the internal temperature of the pork belly. It should reach around 170°F (77°C) at this stage. During the cooking process, you can spritz the pork belly with an ACV spray bottle. This will help to keep it moist and don't cook it. Stir the coals or add more if needed to maintain the desired temperature.
  • For the hot honey glaze, simply add hot honey to your ACV spray bottle, ensuring it is still sprayable. Spritz the pork belly periodically over the next hour or so, allowing the glaze to develop and caramelize.
  • Continue cooking and probing the pork belly until it reaches an internal temperature of around 197°F (92°C). This temperature ensures that the meat is tender and fully cooked.
  • Once the pork belly is done, remove it from the grill and let it rest.
  • Slice the grilled pork belly into desired portions.
  • dive in to the deliciousness of grilled pork belly with a hot honey glaze. The combination of sweet and heat will make this a  crowd-pleaser!
