Today I dive into the nostalgic style of ribs that I grew up with. Saucy, smoky, tender Chili’s style Baby Back Ribs. This is a low effort cook & perfect for a summertime weeknight meal! I highly recommend giving this one a try!
- 1 rack of baby back ribs
- Your preferred seasoning or dry rub
- Your favorite BBQ sauce
- Take your rack of ribs and pat em dryyyy.
- Season generously on both sides with your preferred seasoning.
- Let the ribs rest for about 10 minutes to allow the salt to draw out some moisture.
- Fire up your pit to 275°F.
- Place the ribs on the upper rack of the pit and cook until they reach an internal temperature of 165–170°F (about 1 hour).
- Wrap the ribs tightly in tin foil and return them to the pit for about 30 minutes.
- Remove the ribs from the pit, unwrap, and let them cool slightly.
- Fire up the grill to high heat.
- Place the ribs on the hot grill for a few minutes per side to develop a crust.
- Brush the ribs with a thick layer of BBQ sauce, flipping to coat both sides. Grill 4–5 minutes per sauced side.
Once the ribs are fully cooked and coated, remove from the grill and let them rest before serving.
