Today I cook up a super easy BBQ chicken recipe on the Weber Kettle. This is probably the easiest, cheapest and fastest recipe to barbecue!
- Chicken leg quarters
- Spray oil
- Chud rub (or your preferred seasoning)
- BBQ sauce of your choice
- Prepare the chicken leg quarters by patting them dry. There is no need for trimming or butchering.
- Start by seasoning the chicken. Begin on the backside of the leg quarters and spray a light layer of oil to help the seasoning stick. Apply an even layer of Chud rub (or your preferred seasoning) to both sides of the chicken.
- Fire up your Weber kettle grill using Fogo premium charcoal. Get the charcoal nice and hot, aiming for indirect heat cooking. Place the chicken on the grill
- Put the lid on the grill and keep the bottom vent wide open throughout the cooking process. This will help maintain a consistent temperature inside the grill.
- Cook the chicken for about 45 minutes, or until the internal temperature reaches 175°F (79°C).
- Once the chicken reaches the desired internal temperature, it's time mop on some BBQ sauce.
- Allow the chicken to sit on the grill for another 10-15 minutes to allow the sauce to caramelize and create a delicious glaze.
