Fresh Caught Grilled Fish Tacos

Today I’m at my family's beach house and we gon fishin’. I fire up some small, but tasty fish tacos with the fam! Nothing better than pulling a fresh fish out of the water and eating it within the hour! I highly recommend it!
- Fresh whole fish, cleaned, scaled, gutted, and filleted
- Desired seasoning (Snakebite, Poultry Rub)
For the Mango Salsa
- Fresh mango, diced
- Red onion, finely diced
- Fresh cilantro, chopped
- Fresh lime juice
- Serrano peppers, finely chopped (optional, for heat)
Fish Taco Sauce
- 1 cup mayonnaise
- 1 cup sour cream
- Chipotles in adobo sauce, chopped
- Fresh lime juice
- Salt and pepper, to taste
For Serving
- Corn tortillas
- Cabbage, thinly sliced
- Guacamole
Fresh cilantro, chopped
-Begin by cleaning your fish. Scale, gut, and debone, then remove the filets. Rinse the filets and let them rest in the refrigerator while preparing the toppings.
-Season the fish filets with your desired seasoning.
-Prepare the mango salsa by combining diced mango, red onion, cilantro, lime juice, and serrano peppers if desired. Mix well and set aside.
-For the taco sauce, stir together mayonnaise, sour cream, chopped chipotles in adobo, lime juice, salt, and pepper. Adjust to taste.
-Slice the cabbage and prepare guacamole if using.
-Fire up the pit. Place the fish filets skin side down. If the filets are small, use a pan to prevent sticking. Cook quickly until the skin is crisp and the fish is tender.
-Warm the corn tortillas.
-Assemble the tacos with a tortilla base, followed by grilled fish filet, mango salsa, sliced cabbage, taco sauce, guacamole, grilled corn if using, and a sprinkle of fresh cilantro.
