In this week's Summer Grill Series video I cook up a salmon filet on the charcoal grill. Hit with a simple rub and then a simple glaze, this dinner is super easy!
- Salmon filet
- Chud rub or your preferred seasoning
- Baby potatoes
- Extra virgin olive oil (EVO)
- Salt
- Head of broccoli
- Butter
- Glaze of your choice (e.g., sweet soy sauce glaze)
- Sesame seeds
Prep the Salmon:
- Take the salmon filet and season it with Chud rub or your preferred seasoning.
Fire up the Grill:
- In a perforated grill pan, place some baby potatoes that have been tossed in EVO and seasoned with a little salt or your preferred seasoning. Grill under tender.
- On the grill grates, put a head of broccoli that has been brushed with EVO to char it slightly. Once charred, transfer the broccoli to a metal bowl, add a knob of butter, and cover it to let it steam itself.
Grill the Salmon:
- Place the salmon filet on the grill, skin side down.
- Cook it for about 3-5 minutes or until the skin no longer sticks to the grill grates. This will help create a crispy skin.
- Carefully flip the salmon over using a spatula. When cooked go ahead and add some glaze
- Brush the glaze of your choice (e.g., sweet soy sauce glaze) onto the top side of the salmon. Sprinkle sesame seeds over the glaze.
- Close the grill lid and let the glaze set for a minute or two, allowing it to caramelize slightly.
- Plate up and dive in!
