Dino Ribs (aka Plate Ribs, Beef Short Ribs, or Bronto Ribs), cooked on the Weber Kettle is a super easy barbecue cook for any level of cook!
- Beef ribs
- Salt
- 16 mesh black pepper
- Granulated garlic
- Apple cider vinegar (ACV)
- Start by preparing the beef ribs. Trim any excess fat from the top cap of the ribs, leaving a thin layer for flavor and moisture retention.
- S/P/G rub. Use a ratio of 2 parts pepper, 1 part salt, and 1/2 part granulated garlic. Mix well.
- Generously season the beef ribs with the S/P/G rub, ensuring all sides are coated. Don't forget to season the sides
- Fire up your Weber grill and aim for a temperature range of 275-300°F (135-150°C). Arrange the beef ribs on the grill with the thicker side facing the coals.
- Place wood chunks on the coals to add a smoky flavor to the ribs. You can use your preferred wood
- Cover the grill with the lid, ensuring that the vents are positioned above the meat for optimal airflow. This helps maintain a consistent temperature and allows the smoke to circulate around the ribs.
- Let the beef ribs cook for approximately 3 hours, checking occasionally. If the ribs appear to be getting too crispy on the surface, you can spritz them with apple cider vinegar (ACV) to keep them moist.
- Continue cooking the ribs until they reach a probing tender stage or an internal temperature of around 200°F (93°C).
- Once the beef ribs are done, carefully remove them from the grill and let them rest for a few minutes until the internal temperature reaches 145°F (63°C).
- Slice the beef ribs between the bones to create individual portions.
